RECIPE- GUAC DEVILED EGGS WITH BACON. (Devilishly good and good for you)

Bacon!
I'll keep this simple...Eggs are highly nutritious - they contain a wealth of vitamins and minerals and are one of the best sources of high quality protein.  And these bad boys make a great snack. Especially if you add a few tablespoons of home made mayo to the eggy filling! Oh my!








Guac Deviled Eggs with bacon!

6 large eggs, hard boiled
1 medium avocado
6 slices of bacon (some to eat)
2-3 tsp lime juice
1 tsp red onion, minced
1 tbsp minced jalapeno (optional)
1 tbsp fresh cilantro, chopped (optional)
salt and fresh ground pepper, to taste
1 tbsp diced tomato OR SALSA
pinch chile powder (for garnish)

Fry up that bacon!!! Now! Do it! Peel the cooled hard boiled eggs. Cut the eggs in half horizontally, and set the yolks aside. In a bowl, mash the avocado and 2 whole egg yolks; discard the rest. Mix in lime juice, red onion, jalapeƱo, cilantro, salt and pepper and adjust to taste. Fold in tomato or what I do, ADD SALSA - way easier. Scoop heaping spoonfuls of the guacamole into the 12 halved eggs. Sprinkle with a little chile powder or bacon or both. Enjoy.

HINT HINT! If you happen to have guacamole on-hand, this process becomes a lot easier!
