A RECIPE FOR MY REAL FOOD CHALLENGE. (quick and dirty banana nut muffins)

Cheating without cheating.  This is REAL FOOD, so not a burpee in sight. HA!

Ingredients
1 large mushy banana
6 eggs
¼ cup coconut flour
½ cup crushed walnuts or almond slivers
1 tsp cinnamon
1 tsp vanilla
optional: drizzle of maple syrup or honey...dark chocolate chips

Instructions
Preheat oven to 350 degrees.
Mash the bananas in a bowl until  ‘liquid-y’...that a word? Add all the eggs - mix. Throw in coconut flour and mix it again until its smooth and all coconut lumps are gone.
Stir in cinnamon and go nuts!  OK, add nuts.
Spoon into a lined muffin tin. Bake for 20 or so minutes, until firm.

If you want them a bit sweeter, drizzle with a small amount of maple syrup or add chocolate chips, but just a few. Otherwise you'll have to do burpees!
