PROTEIN BARS (Whole lotta nuts)

How many ingredients does it take to make GRANOLA?

My youngest asked me to make him some cereal.  I did.  The recipe, though I rarely follow them, is here. Not following a recipe is why I wound up having way too much.  No problem.  I decided to turn the extra into a protein bar by loosely using this recipe by mutritiousnuffins.




Go ahead give them your very own half-assed try.

It's not complicated if you don't make it so.  All you really need is a bunch of nuts, seeds, dried fruits if you want. A food processor and something to bind the bars together,  like nut butter or eggs.  The nut butter option doesn't need cooking but do cook the eggy bar. I didn't add any sugar, instead I used vanilla flavoured protein powder and dates to sweeten these bad boys.

As for the topping, I simply melted coconut oil and mixed in vanilla protein. Super duper simple - drizzled it on top of the whole mess after it was cooked in the oven on 300 for 20 minutes or so.  Use your nose.  It will tell you when they are done.

Option number deux.
Use the none eggy version of this pseudo recipe.  Add a bit more nut butter and protein powder so that the mixture is somewhat sticky.  Roll it up into a ball and cover in dark chocolate by melting the chocolate in a double boiler and dipping these protein packed goodies in.  Place them in the fridge and you got yourself an indulgent post workout food.
