RECIPE: MY HUSBAND'S VERSION OF CRACK! (Pumpkin spiced latte)

I love coffee!  I really do. I also love my husband and he, me. But fall is here, which heralds the return of Starbuck's Pumpkin Spiced Latte and I do believe, he'd push me down and use my limp body as a springboard to get to one of these devilishly delicious elixirs. Meh, who can blame him?  They're so good!  They're so BAD! At around $5 for one of these 16 OZ  bad boys and a whopping 47grams of sugar, who can afford it?!

Instead, I’ll be making this easy recipe.  Whip it up in a crock pot or make it on the stove, either way you get your Starbucks (pretty close) but without all that sugar or added orange color. And the best part...you won't get trampled by a significant other. Bonus! Vitamins and minerals are included.

P.S. It's kid-approved when no coffee is added.

REAL FOOD Spiced Pumpkin Latte

A spicy and delicious pumpkin latte made with real food and it's dairy free! My stomach prefers that.

What you need to get!

  • 4 cups of Unsweetened Coconut Milk (or 2 cans of coconut milk)
  • ¼ cup canned pumpkin
  • 2 tablespoons of natural vanilla extract
  • ½-1 tsp of pumpkin pie spice ( or ½ tsp cinnamon and a sprinkle of cloves and nutmeg)
  • 1 cup of strong coffee or ¾ cup espresso...not for the kiddies
  • honey or maple syrup to taste for those who prefer a sweeter drink (optional)
Heavy cream for whipping (optional) OR
The cream that accumulates at the top of a can of coconut milk (dairy free version)

The how to's

  • Pour all ingredients except heavy cream into crock pot.
  • Use immersion blender or whisk to mix well.
  • Turn crock pot on low for 2 hours until hot and flavors are incorporated.
  • Whip cream in blender or by hand with a dash of vanilla and top lattes (optional).
  • Drink
To get this incredibly yummy brew into your belly as soon as possible you can also heat this up on the stove top, though the spices don’t incorporate as well and it tends to thicken. The crock pot version is better.
ENJOY!

  2. Do I get a hug?
I use twice the amount of spice because that's just the way I roll. Most people like it a bit sweeter...pas moi. If that's the case then use real maple syrup; Super yummy! NOT TABLE SYRUP - MADNESS!
