Recipe:PALEO GRANOLA (just nutty and a bit fruity)

2 cups mixed almonds, hazelnuts, macadamia and brazil 
nuts
1 cup dried plums or dried cherries, cranberries or apricots
1/2 cup pumpkin seeds
1/2 cup hazelnut or almond meal
1/2 cup coconut flakes (if you have them)
1/2 cup melted coconut oil
5-6 tbsp honey or maple syrup
1 tsp vanilla extract
Optional but very nice: zest of 1 orange

You will need a food processor or some other way to break the nuts into smaller crumbs

So easy. 


Preheat the oven to 300. Add whole nuts to a food processor and mix into medium size crumbs, some of it will turn into finer flour/meal like consistency but that’s what we want – a variety of shapes and sizes. Leave the dried fruit out of this next step...you add those after it's all said and done otherwise they get really hard.  Mix processed nuts and all other ingredients in a large mixing bowl. Next, microwave the coconut oil, raw honey and vanilla extract together in a medium sized mixing bowl for about 30-45 seconds. Add the seeds, nuts and coconut flakes and stir. Use a wooden spoon or a spatula to break down the clumps, which will form when coconut oil and honey come into contact with dry ingredients. It’s ok if some of them remain unbroken. Bake for 18-20 minutes in total or until golden brown on top. Spread the granola mixture over a baking sheet lined with parchment paper and cook for about 20-25 minutes or until lightly browned, stirring once or twice. Remove from heat and add the raisins or craisins or dried fruit and sprinkle with sea salt.

Transfer to an air-tight container. It should keep for up to a week.

Looks like a lot but it's really simple.  Find some nuts add some fruit and spices.  Mix and go.  

Another alternative would be an apple cinnamon mix.  Throw in some apples to the food processor and bake along with the other ingredients.  You can see both recipes on the left. Super tasty.
