RECIPE: Post Workout Pumpkin Pie Pudding (So freakin' easy and almost sinful)
Cheat on your WOD with this post workout delight. It's so stupidly easy to whip up and it has everything you need in a post workout meal/snack/dessert. Damn!
Crust (really just sprinkled on top.)
1/2 cup hazelnuts
1 cup pecans
2 tablespoons melted organic grass fed butter or Ghee
1 tbsp of honey or more to taste
pinch of sea salt
Place the nuts in a food processor, if you don't like them whole otherwise just throw everything together in a microwave safe dish and pop it in. Just enough time to melt everything and mix it up. Or, forgo all of this and just use a trail mix or nutty granola . I have a recipe for that.

1 – cup of pumpkin puree (I had butternut squash so I used that)
1 egg
1 tbsp honey
1/2 cup coconut cream
1/4 tsp. ginger
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1 scoop vanilla protein powder (optional)
1/2 tsp baking powder (optional for pie)
3 tbs almond meal (optional for pie)
Whisk all of the pudding ingredients together. Toss it in the microwave for 1 min. stir and throw it back in for another whole minute. And voila! Protein, starchy carbs and fat. The perfect post workout food. The optional protein powder will give you extra bang for your buck. Another option would be to add another egg but that will change the consistency - a bit more pumpkin pie like. Add almond meal and baking soda for pie filling;) Did I say stupidly easy? Yeah, that's exactly what I meant.
