BORROWED RECIPE: AVOCADO & MANGO SALAD (use the avocado as a bowl)
I borrowed this from the Spartan Race. They have some recipes. Eventhough, I have issues with cheese I'd just use a bit in my salad as I can handle a little or substitute it with something I can tollerate. I wouldn't go so far as to buy lactose free like they suggest. I'm a huge proponent of real food and most of these accommodating foods are completely man made. Either way...yummy salad.
2 avocados
2 tomatoes
1 mango
50g of lactose free allegro cheese 4% fat (if lactose intollereant otherwise regular cheese)
1 Lemon’s Juice, squeezed
2 tablespoons of fresh cilantro
1 tablespoon of chili paste
Salt and pepper to add taste
shrimp (my option addition)
Dice the mango, avocado, tomato and the cheese in small cubes, add the fresh herbs and spices.
Mix the chili paste with the lemon juice, pour onto the salad mix.
Place the salad in the empty avocado shells.
