RECIPE: SWEET POTATO MUFFIN (full of protein and carbs...post workout treat, perhaps?)
I was looking for something to do today because it's been pouring outside. I was also looking for an easy post workout solution that'll double as a school snack for the kiddlets. Muffins are easy enough. So I did some experimenting...sweet potato is a great post workout carb so why not make it portable, hence muffin.
These puppies were whipped up in a matter of minutes. Throw some sweet potatoes into the microwave and mash them up. In the mean time gather up everything else. There's really no need for sweetener but because these are also for the kids I added maple syrup and chocolate chips because they're yummy.
Protein, carbs and chocolate chips...but not too many chocolate chips. That will be defeating the entire purpose of any previous training.
1/2 c Coconut Flour
6 Eggs
2 t Vanilla
1 t Salt
1 t Baking Soda
2 t Cinnamon
1/2 c Ground Flax
2 Sweet Potatoes or Yams, baked and mashed (discard skins)
1/4 c maple syrup (optional)
1 c Raisins or Chocolate Chips (optional)
Super easy to make...really!
Whisk together all the dry ingredients. Beat the eggs and add dry. Add the mashed sweet potatoes. Mix , mix, mix. Then spoon, spoon, spoon batter into lined muffin cups. Bake at 350 degrees for 30-35 minutes.
