RECIPE : LEFTOVER CHICKEN TACO LETTUCE WRAP (that's a wrap)
Chicken
1 red pepper, diced
1 cup frozen corn
1/2 cup salsa (I made my own)
1/2 cup mayonaise
Salt
Onion Powder
Garlic powder
Cumin
Season chicken with a dusting of sea salt, onion powder and garlic. Bake at 350º F until internal temp reaches 165º F or just use last nights leftovers like I did.
In a medium sized bowl, mix together corn, salsa, Mayo, red pepper, dusting of cumin and diced chicken. Serve on a leaf, like a taco or on a bed of lettuce with some tortilla chips and have a taco salad.

(Optional) but still yummy. Mix everything in with some cauliflower rice and wrap that up like a burrito. Add extra salsa. You're getting lots of veggie, a bit of protein, fat from mayo and carbs in the form of corn and salsa. (Optional) If you haven't cooked chicken just throw all the meat and veggies in a pan. Fry them up and top with a mix of salsa and mayo or sour cream.
