RECIPE - COCONUTTY FISH STICKS (even kids will love it)
Get a one, two punch of Omega-3's. Possibly a flurry to the gut with Omegas 3 and some 6 from the nuts! These little morsels reminded me of coconut shrimp. But they’re fish sticks! My husband disagrees with this analogy but really enjoyed them. As did both children. Nothing was left and I made extras. They didn't taste fishy at all and it was so very easy to do.
Ingredients
1 C almond flour1 C coconut flakes
2 tsp salt
1 tsp garlic powder
1 tsp dill (didn't have any so I used coriander seed)
1/2 tsp lemon pepper (I used fresh lemon rind)
1/2 C olive oil (I did half coconut oil/olive)
3 lbs. white fish, cut into 1″ slices (I used Cod)
Instructions
Combine flour, coconut, and spices in the food processor and pulse into a meal. 
Place mixture into a small bowl
Pour oil into a separate bowl
Dip each fish into oil, then meal, then place on baking sheet

Bake for 20 - 30 minutes at 350 degrees until lightly browned and cooked through.
